I definitely second the suggestion of climbing Arthur's Seat and/or walking along the Salisbury Crags. It both feels like a short hike and like you climbed a mountain!

If you enjoy dancing, go to a ceilidh on Saturday night when you are in Edinburgh (or tonight or tomorrow night wherever you are those evenings).
